Edged Weapons and Safely Escorting Prisoners.7 Guidelines to Ensure Your Safety:

1) Since a lot of people who illegally carry a knife or bladed weapon often carry more than one concealed in different places on their body, any person who has been restrained following being involved in a bladed weapon incident should be systematically and “carefully” searched. Understand that once you have detained the person that they're under your duty of care.
7) Acceptable Use of Force.
The theory of use of force in a knife attack is comparatively clear-cut, with some exceptions. Security officers can be punished in the courts for using disproportionate force when managing offenders where their physical response is not appropriate to the level of danger that the offender is presenting during the incident.

You must keep in mind that as a security officer it isn't your function to punish offenders, but then again, a knife or bladed weapon assault has to be treated with the utmost gravity.
